A quick & cheap summertime supper


Unbelievably, we are having a relatively low-key and unencumbered weekend (which is why I have had time to play on the computer and it's not even after midnight!) We decided to try something new on the grill tonight.



I'm very proud of the fact that this supper-for-two (with leftovers for Bob's lunch on Monday) cost approximately $6.00 total. And it was pretty nutritious as well. It consisted of whole grain brown rice, and beef shish-ka-bobs made with fresh green & orange peppers, vadalia onions, & tomatoes. I marinated the meat in Italian dressing to add some flavor, as well as using a little sea salt & fresh ground black pepper. The whole operation only took minutes ... and it is amazing how filled up you can get with whole grains and veggies, and just a little bit of meat.

Looks and sounds delicious! Wonderfully colorful too. I do something very similar alternating chicken and beef.

hee hee hee...it's only about the 3rd time we've used the grill. We had to get a new one after our old one caught fire Memorial Day! And yes, we were just saying that we could do the same with chicken! It really seems odd to only cook for the two of us...and actually it doesn't happen all that often as we frequently have "extras" :)

Whew! I thought perhaps we were doing something wrong - no matter what we do, we can't seem to keep our grill looking clean for very long!
I really enjoy using the grill, even just for the two of us (less pans and dishes to wash). Tonight I'm grilling for six adults, boneless pork sirloin chops.
I am glad you decided to have all those special extras for just the two of you. It looked and sounded delicious!
